Sweet Maida Diamond Cut Biscuits


Of all the authentic deep fried snacks, I feel this is the easiest one with minimal ingredients.The sweet and spicy version of this maida biscuits needless to say are very addictive and one cant resist with just a single diamond biscuit  ;-)

Ingredients:


  • All purpose flour - 2 cup
  • Powdered Sugar - 3/4 cup
  • Ghee/Oil - 2 tsp (Heat it or microwave it for 15 sec)
  • Oil - to deep fry
  • Salt - 1/2 tsp

Procedure:

In a mixing bowl, mix flour, salt, sugar and warm ghee.


Add water and make into a smooth dough. Consistency should be like chapathi dough.  Spray some oil on top and keep aside covered for 30 mins.



 Knead the dough again and divide into equal parts. Roll as thin as possible evenly with generous dusting. With the use of pizza cutter/ knife, cut out thin strips. Cut diagonally to make little diamonds. Gently peel using a spatula and set aside.




 Heat oil in a kadai and when it is hot, sprinkle the diamonds into the oil. Cook in medium flame turning around to make sure it is evenly cooked.



Once done remove from oil and drain in tissue paper. Cool and store in air tight containers.


Spicy roasted Garbanzo /Chickpeas

This oven roasted recipe with soaked Chickpeas/ Garbanzo beans is one of my favorite low calorie recipes and is perfect for an evening snack. Last time when I prepared this it was raining heavily and this spicy and tangy roasted chickpeas were apt for an evening snack with a movie.
For this easyyyy recipe you can use any type of beans or chickpeas. The seasoning for it can also be varied according to ones own taste buds...I wanted it spicy and a bit tangy and hence i used chat masala. You can also try  with garam masala.

Ingredients


  • 1.5 cups dry chickpeas soaked overnight 
  • 1 tsp cumin powder
  • 1 tsp chat masala
  • Salt to taste
  • Chilly powder to taste
  • Oil to spray

Method

Preheat oven to 400F.

Soak the chickpeas overnight and pressure cook until done. If using canned garbanzo, wash and strain them and directly add the seasonings.



To the cooked garbanzo add salt, red chilly powder, cumin powder, chat masala and toss them well so that the seasoning spreads evenly.






Spray a baking tray / sheet and spread the garbanzo in it. Bake in a 400F preheated oven for 40 – 50 minutes until the beans turn crunchy.



Remember that the beans get more crunchy on cooling. So remove from oven accordingly when are a bit soft and not wait for it to turn completely crunchy.
